EDGELEY, N.D. (NewsDakota.com) – Jay Mathern says its been a long process, but receiving grant funding from the Department of Agriculture puts them one more step towards building a needed meat processing facility in Edgeley.
Mathern and his partners were the recipients of Agricultural Products Utilization Commission (APUC) funding, which is administered for research and development of new and expanded uses for North Dakota agricultural products.
Butchers Edge was awarded $61,500 to help get things started. Mathern added that the need for a meat processing facility has been prevalent in Edgeley and the surrounding area.
He says while this is an important building block towards operation, there are a few things they’re waiting for to get started.
Mathern says they’re looking at setting up the Butchers Edge on the southside of Edgeley in the former Fisher Flying Products building. He says their goal is to open their doors by January or February of 2022, but depends on the different hurdles his group faces.
Mathern says with wait times upwards of a year for custom slaughter, the hope with Butchers Edge is to reduce that time. He added they will look to possibly add retail in the future once they begin operations.
